There are a number of very useful  reference works in the field of Classics that you will want to know about at the outset.  Here is a short list of those (all or at least partially in English) that contain articles on selected topics in Greek and Roman religions, and which will also give you a bibliography of further readings.  I have also included call numbers and locations in Van Pelt Library (VPL) and when helpful a brief description of the work:

Oxford Classical Dictionary (OCD), third edition , S. Hornblower and A. Spawforth, eds., Oxford University Press 1996.(second edition 1970, first edition 1949)  Description:
One volume encyclopedia organized alphabetically.  Generally the first place to go for a brief introduction to a subject, author or place.

Cambridge Ancient History (CAH), second edition, 1961- (first edition 1923-1939)

contents (religion)

Description:
I provide an online list of those chapters relating to the study of Greek and Roman religions.  I have left copies of the bibliographies from these chapters on reserve in VPL, since they are quite useful.

Aufstieg und Niedergang der römischen Welt; Geschichte und Kultur Roms im Spiegel der neueren Forschung,  (ANRW) Hrsg. von Hildegard Temporini.
Publisher:  Berlin, New York, De Gruyter, 1972-

index
contents (religion)

Description:
This is a very large and somewhat ungainly collection of survey articles on all sorts of topics in Classics.  Unlike OCD and RE, it is not organized alphabetically and should not be consulted for short articles on any subject at all, but rather contains summaries of the ancient evidence or the modern scholarship on larger topics.  Most of the articles are in German, but a good minority are in English or French.  A searchable index is available online, but I have also typed out the titles of all articles in English from the Religion volumes (vv. 16-27).  Consult the latter to get a sense of the sort of articles to be found here, and the former for a particular subject.

     Location:
Van Pelt Library

If you want a more or less complete bibliography of scholarship in Classics, consult:

L'Année philologique; bibliographie critique et analytique de l'antiquité gréco-latine (L'Annee),  Paris, Société d'édition "Les Belles Lettres,"  1924/26-.

review

Description:
Although this is a French publication, it indexes books and articles in virtually all languages.  Bibliographic citations are generally in the language of the work cited, but short summaries, when they are available, are in a language chosen by the reviewer.  L'Annee therefore is of great use to the monolingual English speaker, provided only you can find the French for your desired subject heading. Van Pelt has a CD ROM that allows quick searching of  recent volumes.

The best encyclopedia on topics in Classics is, unfortunately, only available in German, but if you can read it then it should generally be your first or second stop.  It comes in two flavors, a full edition and a short one (the "Kleine Pauly"):

Real-Encyclopadie der klassischen Altertumswissenschaft (RE), A. Pauly, G. Wissowa, and W. Kroll, eds., Stuttgart : J. B. Metzler, 1894-1963.  Location:

A Greek-English Lexicon (LSJ), ninth edition, Henry George Liddell, Robert Scott, Henry Stuart Jones, et al., Oxford:  Clarendon Press, 1940 (with later supplements).  Description:
Available in three flavors:  small (the "Little Liddell"), medium (the "Middle Liddell"), and large (the "Great Scott").
